2 cups of black beans
1 cup of shredded hard tofu
1 cup of minced sautéed mushrooms
1 minced onion
2 tablespoons of thyme
Salt and pepper
Chilli powder / smoked paprika
½ cup of vegan bread crumbs
3 tablespoons of yellow mustard
Vegan American cheese
1 cup of mayo
⅔ cup of ketchup
3 tablespoons of chopped dill pickles
½ teaspoon of salt
½ teaspoon of pepper
1 teaspoon of sugar
1 teaspoon of apple cider vinegar
2 russet potatoes
2 liters of cooking oil
1 white onion chopped and sautéed
Vegan American Cheese
Combine the beans, tofu, onions, mushrooms and seasoning in a bowl. Mash them up to as fine of a paste as possible.
Mould tennis ball sized balls and form them into patties. Put them on a baking tray and freeze them for 20 minutes.
When the patties are frozen, heat a frying pan with a tablespoon of olive oil. Fry the burgers on either side until brown and firm.
Spread mustard on the burger and fry it once more.
Put a slice of cheese on each burger, put them in the oven until the cheese is melted (about 5 minutes).
Fries and Animal Sauce
Peel and slice the potatoes. Rinse them under cold water and dry them. Heat a deep fryer or pot with cooking oil to 325 degrees F. Fry the potatoes for 5-7 minutes.
Take the potatoes out, turn the heat up to 350 degrees F. and return the potatoes to the fryer for another 2 minutes or until they become crispy.
Combine the mayo, ketchup, pickles, ½ teaspoon of salt, ½ teaspoon of pepper, 1 teaspoon of sugar, 1 teaspoon of apple cider vinegar. Mix well.
Add a slice of cheese to the fries. Cover in sautéed onions, and animal sauce.
Building the burger
Add animal sauce to the bottom bun. Add a few slices of pickles, a sliced tomato, lettuce and the first burger. Add a slice of onion, and the second burger. Add more animal sauce to the top bun and close it.
